Ayaraya oka/Otipi is a meal prepared from a blend of local beans called Agbugbu or fio fio( pigeon pea) with slightly grinded maize (Zea mays) and vegetables.
Agbugbu is an important source of protein in both urban and rural Nigeria. It's a native food that is mostly prepared by Nsukka people of Enugu State in South Eastern Nigeria.
This species of beans is loaded with various types of nutrients. It is rich in fiber, protein, iron, potassium, low in fat and calories.
INGREDIENTS
•Fresh Maize or dry maize
•Agbugbu/fio fio(pigeon pea)
•Palm oil
•Vegetables (Ugu leaf, Añara)
•Oil bean(ukpaka)
•Onions
•Salt
•Fresh pepper
•Seasoning cubes
PROCEDURES
Parboil your fresh maize for 10 minutes
Cook the agbugbu till it's done
Grind the parboiled maize and mix it with small quantity of red oil and a little water
Mix the vegetables with the maize and steam it for about 15-20minutes
Remove maize into bowel.
Tip: Now that the maize and Agbugbu is done, you will make the sauce.
Get clean pot and fry oil for 30 seconds.
Add onions and paper and stir.
Add water, oil bean, seasoning cubes, salt, stir and allow to boil for 3 minutes.
